Stop the Madness, Grate Your Cheese Already!

I have to admit I was once the one buying the huge bags of pre-grated cheese from the refrigerators at Sam's Club. Then, I saw the light, well, it was actually the florescent strips in the fridge, they are kinda mesmerizing!

While a dear friend of mine and I were planning a huge party for 150 people she said, "why are your buying that high dollar pre-shredded mess?" Since I was a kid I'd always seen blocks of cheese in the market and thought maybe those were for the French people that immigrated to our town, but then I thought, I don't even know any French people South Carolina! Then, I discovered the world of block cheese.
Block cheese is more affordable and gives you many greater options. A small block of cheese cost less and yields so much more cheese than you think. Also, pre-shredded cheese is filled with preservatives and additives that keep it from sticking together and molding. Once you know that, it's a no brainer. So, get yourself a grater and go to town. Your food and your budget will thank me.
HANDY DANDY HELPFUL HINT-
Grate your cheese onto paper towel so you won't dirty one more plate. (After all we all want more dishes to wash, NOT!) The towel on your counter creates a great flat surface allowing you to bare down. Also, the towel makes it very easy to pour your cheese right where you want it into your oooey, gooey, goodness.
